Eduardo Bilardello began his culinary career in Sicily at age 14. He travelled and worked throughout Europe before moving to Vancouver in 1990. He later worked in several establishments of varying styles and taught in culinary school before opening Brioche in 2003, bringing traditional Sicilian cooking into a West Coast context with fresh, simple, high-quality ingredients.
