Jacob Ying Wai, known as Chef Jacob, began cooking at age 10 by preparing family dinners and shopping at a local Hong Kong market. He trained at the Hong Kong (China) Culinary Institute, worked through Japanese, Italian, French, and American cuisines, and holds qualifications from Hong Kong, Germany, and Canada, including a Red Seal. After moving to Calgary in his mid-20s, he opened Second Son in 2024 to showcase approachable modern Chinese food.
