Chef Jhonattan Lona has more than 21 years of experience in the culinary industry. He has worked in restaurants throughout Mexico and was one of the pioneers in the gastronomy scene on Holbox Island, where he lived and worked for four years.His career has also taken him to Italy, Brussels, Spain, and Canada, including the Marriott in Vancouver, Amicci in West Vancouver, and Chillawak in White Rock. At Fonda Fora, he continues to showcase a contemporary approach to Mexican cuisine.
