Chef Derek Wilkins started his career at Rouge Restaurant working under Chef Mike Dekker. During his three-year term, he worked his way up from prep cook to sous chef. He later worked in multiple venues and was chef de cuisine at Workshop before bringing his fine-dining experience and focus on sustainability to The Wednesday Room.
