Our story
We are an atmospheric dining experience rooted in the Pacific Northwest. Our menu highlights seasonal ingredients, coastal influences, and an enduring connection to the land, with thoughtfully sourced produce and seafood from local farms, fisheries, and producers elevated through refined culinary technique and warm hospitality.Located in the heart of downtown Vancouver at Burrard and Georgia Streets, we invite guests to gather, linger, and experience the region through food, wine, and hospitality. We welcome guests for breakfast, lunch, and dinner, and we also offer in-room dining for pickup, room delivery, and poolside delivery.
Meet the chef
Daniel Chiang is the executive chef for Cloudstreet at Hyatt Regency Vancouver. He leads the hotel culinary team, with Cloudstreet’s back-of-house brigade overseen by Chef de Cuisine Craig Sung, who has experience cooking in hotel kitchens in Vancouver and Australia.

tetchanThis place deserves a big shout-out! NGL, I went to the restaurant located inside the hotel because I didn't have much option. I had my mind blown, it totally surprised me with the quality, presentation and taste! A trifecta. I enjoyed so much so I dined more than once. Do not be stereotyped about the hotel food, you too will be pleasantly surprised!!

Daniel CadieuxMosaic Bar & Grill, located inside the Hyatt Regency in Vancouver, is a really nice spot for a meal. I visited for breakfast and was impressed with the overall atmosphere. They offer a buffet that’s quite expensive, but fortunately there’s also a regular menu available.The food was very good and the service was excellent. Vancouver’s hospitality really shines here — friendly staff, great service, and a welcoming environment. Overall, it’s a solid place to start your day if you’re staying nearby.
Alan GillAmazing food, over-the-top for service... Our waitress was fantastic. I'd say the highlight for me was the prawn salad... They have a kids menu which was nice. The highlight for me was the shrimp salad appetizer. Cold shrimp in a Japanese style mayo with greens.... Crazy good. Wife loved her steak and I thought the mashed potatoes were some of the best I've ever had. Kids had sliders and spaghetti alfredo. Neither complained which is a great sign. The price was a bit on the high side, but we weren't exactly holding back either. My Guinness was cold and refreshing and the wife's mimosa was a hit. Our waitress took the time to take photos of our group and was very accommodating. Overall a positive experience and we'll be back.
